Rava- 1 cup
Sugar- 1 cup

In a heated Pan, add 1 tsp ghee and once it melts add cashews & raisins and roast them till it turns light golden brown move it to another vessel.
In the same pan, add 1 more tsp ghee and add 1 Cup rava and roast it by maintaining medium flame. Secret tip 1: Rava colour should not be fried till colour change but the aroma should be coming out of it.
Once the rava is roasted move it to another vessel or plate. In a kesari making pan add 3.5 cup of water and boil it. If you are taking 1 cup rava, 3.5 cup of water should be used.
Add 50 ml refined sunflower oil to the boiling water, add 25 ml ghee also to this and mix. we will add some more ghee during the final stage. Adding completely ghee instead of oil will make you feel satiated while eating.
Add some yellow or orange food colour to this, Adding food colour is optional. Secret tip 2: Rava should be added only after the water reaches rolling boil stage( big bubbles seen while boiling)
After Rolling boil stage, add the roasted rava and mix it well without leaving any lumps.
Now the rava will absorb all the water in the pan but its still not cooked well so close the pan with lid and leave it for 2 mins. Maintain low flame throughout.
Secret Tip 3: Rava should be cooked well before adding the sugar because after adding the sugar rava wont get cooked and stay raw, which spoils the taste.
Take 1.25 cup sugar and mix it with the rava and mix it well. I have added only 1 cup sugar as my family members like mild sweet taste.
Sugar will start melting after some time and become watery, don't worry it will come back to the normal state again. Keep mixing the rava and don't allow formation of any lumps.
It become thick again, now add half portion of the 25 ml ghee to this and mix it well.
Now add the rest of the ghee to this and mix it well. Add 1/4 tsp rose essence for the flavor, again this is also optional step. Essence will be used in hotel & marriage food recipes.
Add 1/4 tsp Powdered cardamom & finally add the roasted cashews and raisins to this and mix well. Delicious Rava kesari is ready.
